Is animal fat unhealthy? The cholesterol lies unmasked

Vegetable oils are healthier than animal fats. We've been told it for years. But it is a myth.

The idea that animal fat was responsible for heart disease caused the conventional food and fast food industry to switch to vegetable oils 70 years ago because they were “healthier”. Scientists were under the false belief/knowledge that saturated fat (animal fat) caused cholesterol, clogged blood vessels and should be avoided at all costs. In addition, they also discarded avocado and coconut oils, because they were full of saturated fat. Do Avocados and Coconuts Cause Heart Disease? It's complete nonsense.

“Animal” oils are essential for life, fat-soluble vitamins and good health. Most of the omega-6 fatty acids in our diet come from vegetable oils and contain things like linoleic acid (LA). Many doctors believe that this is currently the biggest culprit linked to heart disease.

Despite massive marketing misinformation by the medical system, it was never cholesterol from animal fat that caused heart disease; the obvious reason is that your brain contains 25% cholesterol and almost every cell in your body produces it — that's how important it is for heart and brain health!

The problem is oxidized cholesterol, which has nothing to do with actual cholesterol, but rather with the lipid carrier that carries cholesterol. When the lipid carrier is oxidized by too much sugar in the blood (your oat milk cappuccino, for example), it “rusts” and that rust is the problem: it's called oxidized low-density lipoprotein (LDL).

By the way, red meat doesn't cause heart disease either. Too much red meat can cause cancer (see pages 172-174 in the book for the glycobiology of how that happens), but animal fat doesn't cause heart disease.

So take that tasty piece of red meat every now and then. Preferably from a farmer in the neighborhood. We have a cheese shop around the corner that has a little corner of meat from a cow that he butchers every now and then. I can also recommend Heavenly Meat. They deliver throughout the country.
